Remnant Field Values when creating a view

Sometimes when I am in the IDE and just assigning fields to columns in a view, I will see remnant fields from forms long deleted or strange ones like "MIME_Version".  Why are those still there and can I clean them out somehow?

Hi,
 
if you delete a field from a form it still can stored in documents and contained in the field definition table of a database.
The "$MIME_VERSION"-field is created if data is encoded as MIME and stored in a document, mostly in the mail file.

 Sven - thanks for your response.   I understand what you said about the remnant fields - makes sense.  Turns out my real problem has to do with Rich Text controls for which I am going to start a new thread.  Thanks again for your help.
