(Assuming you are using the ST 7.5 server/client)
If you are somewhat proficient with Java, you could look at the Sametime 7.5 SDK and look at the DDA SDK in the server directory of the toolkit. There is a sample for chat logging that you could modify for your own use, or use as an example of how to employ.
