what will be the iNotes story: it doesn't work there properly at the moment; If I open the prefereces from there, I get two options, text and RT, and don't see the signature that I entered from the client, or vice-versa. However, the signature that I enter from the web does then seem to work. It looks like it actually holds multiple signatures; please tell me that's not how its going to work?

Answer:

Unfortunately, the signatures are separate between the Notes client and iNotes. The new signature feature in the Notes client was added pretty late and we didn't have time to update how the iNotes signature worked. Hopefully, we can make this work better in the next release.
