My old server was running 8.5.2 on the following hardware:
Celeron 600 MHz CPU, 384MB RAM and a 120GB 7200rpm IDE drive.
Worked perfectly fine for me, as a personal server with half a dozen low-traffic websites.
Paul Mooney seemed to have a similar configured server, judging from the 2008 Worst Practices session at Lotusphere: http://youtu.be/uciGgLhdkMo?t=2m41s
From there you can go only up, but the hardware depends on what the server is going to be used for, what applications you have on it, how many users, etc.
For a real world server, I would say to get at least a quad-core CPU, 32GB of memory (memory is cheap!) and of course a fast disk sub-system.
I would have 4 volumes, perhaps something like this:
1) Operating system and Notes Program directory (RAID 0)
2) Domino Data directory (RAID 5)
3) Operating system swap file and Domino temporary view rebuild directory (RAID 0)
4) Domino transaction logging (RAID5)
All drives should be as fast as possible, 10K or even better 15K drives. For 1) and 2) iw ould even consider SSD...
But I am sure some administrator have better suggestions, I am more a developer.
