Not sure about your workflow

Could you do this?
Build the new server.
Replicate dbs from old to new server.
Shut down old server.
Point users to the new server (or reconfigure the new server to 'be' the old server)
Done.

You can replicate in the background while the old server is in use so there is no downtime. Typically if you're doing this, just before you shut down the old server, you'd do a forced push to the new server to bring over any content.

We've followed this process for our last two upgrades which included new hardware and version updates and it works like a charm.
