I'm not sure if this will work in every situation, but it fixed our problem here. Seems that the error message that we were getting that it "Cannot connect to the server" was because the sync connection was timing out. In my case, my Inbox was too large to push to my iPhone. As a test, I created a folder in my mail file and moved all of the documents from my Inbox to it, except for about five. Then I opened my mail on my iPhone and they were there. So, I slowly added documents back into my Inbox and was able to re-add them all. But I did run into some problems because a few were too large and stopped the sync completely. When that happened, I either got a blank screen in my iphone email or I saw the error message "Cannot connect to the server".
In any case, by reducing the number of documents in the Inbox I was able to start the process again.
