While it is possible, you may not want to do it.
The clustering or high availability requirement is a high priority requirement. It is not there now, but I just wanted you to be reassured that it is a high priority to be addresses going forward.
Whenever the device switches servers, a "replace data" or "slow" sync will take place. This will delete all the data off the device and get a new copy of the data from the server. This takes time (the user may notice the data disappearing) and uses quite a bit of bandwidth.
You would not want a load balancer to randomly assign devices - you would want them to be "sticky" to one server over the others. Also, if they are using both server, the servers would both be monitoring the backend mail databases, so that would double the traffic to the mail database as well.
So, you can put a load balancer in front, but you have to make sure the usability is going to be what you want.
