I don't think that each user's mail size is of as much importance as the average user mail size. If you can find the size of the shared mail file(s), and determine how many mail items in it, how big the average mail item is, and how many in-house recipients for each, you should be able to come up with a rough estimate for the average size for post-conversion mail databases. It is this number which will help you determine how many mail servers with how much disk capacity will be required.
