I did this in R5
Install (with required privileges) Notes pgms in c:\pgm files\Lotus\notes\ and Notes data in a network drive with the same* letter mapping (eg u:\) for all the shared-pc-users an din the same* path for all all them (eg u:\notes\data\)
Maybe in R6 there's a better way, but I don't know, as I did not yet upgraded my shared-pc-users.
*this means that from the notes.ini point of view this is the same path, but in fact the path is not the same. This meets your requirements to have the data on different servers.
btw...you spoke of file servers, not Domino servers??? If tou spoke of Domino serveurs, maybe you can try to play with aliases in the pc local host file...surely not in DNS...maybe a bit complex??
